My thought is that they would not want to show the best stuff in the videos since people would know their best stuff and would not need to go to their classes.

A video never even comes close to a private class, even a group class is better, because the teacher can see you and correct an incipient problem before it develops into a fill fledged bad habit. You can always tell dancers that learned from videos because of this. The only work what was mentioned in the video and are oblivious to everything else.

As for "putting the best stuff on the videos", any good teacher is also a good creator, so no, I do not think they would hold back. After all, signature moves get old in a hurry, so hat is another incentive for people to buy videos now and every time a new one comes out, regardless of when they, or if they take classes.
