The original version of Aïcha was written by Jean-Jacques Goldman for Khaled, an Algerian Rai singer based in Paris, and is sung in French (the song was written specifically to capture French audience). The salsa version of Aïcha is by Africando, as nicelau says. It's sung by Senegalese singer Nicholas Menheim.
Not salsa, but if you are into Arabic music, the "1, 2, 3 Soleil" live concert CD is a must-have -- great singing by Khaled, Rachid Taha and Faudel.

If you're into Rai, try anything by Khaled(as previously mentioned), & Cheb Mami(Algeria). Some of the newer Saudi & Egyptian stuff- not exactly salsa but since it is so trendy, they are incorporating latin rythms in a lot of the new tunes. (Amr Diab from Egypt for example- a cross between disco and latin!)
